How does the Academy work?
We develop people for the Hospitality Industry, not just skills and knowledge
The Academy models itself on best practice in the Industry, where the students are professionally trained in our fully functional kitchen, restaurant and bar. The students who attend the full time provision, experience work related learning in our Academy restaurant where they both cook and serve diners on a weekly basis.
Both our full time and day release provision attend culinary skilled development sessions, which include classical training as well as current trends.
Training in the Restaurant covers a wide variety of service including silver service, banqueting, carvery, buffet and fine dining.
